What food goes with Austrian Riesling?

Austrian Riesling is usually dry and acidic with notes of peach and stone fruit, making it very versatile to pair with Thai, Mexican, and Spicy Food. Generally speaking, is a great food-friendly wine.

For instance, I paired a Mexican Food, Tacos Gobernador Ensenada Style WineDivaa Twist, with an Austrian Riesling, Domäne Wachau Federspiel Terrassen Riesling 2021.

It has aromas of stone fruits such a as apricots, citrus and a hint of tropical fruit. On the palate, has stone fruits presents as well with lemon zest, medium-body, dry with high acidity very round on the edges super food friendly. Pairs wonders with the gooey cheese and creamy Chipotle sauce and the juicy seasoned shrimp tacos.

Personal culinary experiences influence my take on Tacos Gobernador Ensenada style. I twisted the original recipe to leave the creamy, spicy sauce on the side rather than mix it while sauteing the shrimp.

Also, I modified the creamy sauce; the original recipe includes mayonnaise, and I replaced it with my family’s secret, which is adding cream cheese and Mexican Cream instead of mayo.

Tacos Gobernador Ensenada Style WineDivaa Twist

Serving Size 6 Tacos

Ingredients:

  • 1 tablespoon of olive oil.
  • 1 tablespoon butter.
  • 1/4 cup of chopped scallions.
  • 1 cup / 250 grams of clean, peeled, and cut shrimp (around 3/4 shrimps per taco 9/12 total)
  • 1/2 chopped tomato.
  • 1/2 cup of roasted corn
  • 3 tablespoons of Mexican Cream.
  • 12 tablespoons of Cream cheese
  • 1 tablespoon of Chipotle Chiles in adobo sauce from a can.
  • Corn tortillas.
  • Cheese to melt (I recommend Gouda or my favorite Muenster)
  • Salt and pepper.

Directions:

Add a little olive oil and butter in a frying pan, add the scallions, and wait until the scallions are seasoned. Next, add the shrimp, continue sautéing, add salt and pepper, and wait a couple of minutes for the tomato to integrate.

While the Shrimps cook, For the Salsa: add the Mexican Cream, cheese, and chipotle chile, and blend or mix depending o the consistency you want. Set aside.

Heat the tortillas on a griddle and put the cheese on top, so it melts.
Next, add a little shrimp stew to each tortilla and fold the tortillas into quesadillas.

Add the Salsa, and they are ready to eat!

They are delicious on their own. However, you can add roasted corn, tomato, Avocado, pickled onions, or pickled vegetables to enhance the flavor.
